Less is usually more and this simple but delicious healthy guacamole more than proves it. Start with the best ingredients which for this recipe is a ripe avocado, fresh garlic, some lemon juice and you are ready to roll. You do not need a whole lot of fancy add ons but if you like I will show you what you can add if you ever get bored with these. Did I tell you, you can make it in a matter of minutes? Well this delicious healthy guacamole can be made in a matter of minutes. So lets get started.
The best thing of simple recipes is when they require only a few items and ingredients to make them. Lets see what we need. A bowl, spoon, fork, mortar and pestle (not required), knife and avocado, salt, pepper, lemon, garlic.
I always start out with the garlic and crush them finely in a mortar and pestle. If you do not have a mortar and pestle, chop the garlic really fine and put in a bowl. Crush the garlic with the back of a spoon to make it soft. Squeeze the juice from half a lemon or lime in a separate bowl. Then we go on to the avocado. You can check to see if the avocado is ripe by first gently squeezing the skin of the avocado first. If the skin gives a little you can remove the stem to see whether it is brown (over ripe do not use) or light coloured (ready to use).
Half the avocado and spoon the contents in a bowl. Use a fork to squash the avocado finely. First add the garlic and mix together thoroughly before adding the lemon juice. The lemon will prevent the avocado losing color and go dark but also gives it a fresh taste. Start with half a tbsp of lemon and stir the mixture before adding more. Taste to see if the lemon is not overpowering the guacamole. If you get a smooth mixture add a pinch of salt and an ample amount of black pepper to taste.
How to make delicious healthy guacamole
If you like some variety in this recipe you can add on or more of the ingredients below:
- spring onion
- chili pepper
- bell peppers
- lime instead of lemon
- chopped tomato (cherry or normal)
- Sriracha (1 tsp)
Great to eat with
Guacamole is great to eat with oven baked corn tortilla chips as a dip. But is also great to eat with pulled chicken bean filling and tortilla, beef filled tacos or a fresh salad with roasted chicken.
How to store
You can keep the guacamole in the refrigerator for about a day in a ziplock bag as it will discolor easily. However you can keep it much longer if you store it in the freezer. Use an ice cube maker to freeze so you can easily take the amount of cubes that you need.
Tip: If you have half an avocado left and want to use it the next day put it in a glass jar and store in the fridge.
