What makes avocados so special

The avocado is a special kind of fruit. Where most fruits are sugars (carbohydrates), avocado also contains fats and proteins. And the good thing is that the fats in avocados are healthy fatty acids. The avocado consists of 15% fatty acids. For 1 avocado this amounts to 30 grams of fat. May sound unhealthy but the fatty acids in avocado really do not compare with the fat in e.g. bacon.

The fatty acids in avocado are mainly monounsaturated and polyunsaturated fatty acids; omega 3, omega 6, omega 7 and omega 9 fatty acids.

Furthermore, avocado contains the following vitamins: vitamins A, B1, B2, B3, B5, B6, B11, C, E and K.

And the following minerals: calcium, magnesium, potassium, selenium, sodium, iron, phosphorus, zinc, copper, manganese and selenium.

In short: there are a lot of different nutrients in this special fruit. All these nutrients have their effect on our health.

Health benefit # 1: lowering cholesterol

Of something that is fat you might expect that this is bad for your cholesterol. The opposite is true. Avocados are very good for your cholesterol. We distinguish the LDL and the HDL cholesterol. The LDL cholesterol is the bad cholesterol and the HDL the good.

Avocados reduce the amount of LDL cholesterol in the blood while simultaneously increasing good HDL cholesterol.

To prevent cardiovascular disease, it is important that your cholesterol is good. Avocado helps with this.

Health benefit # 2: reduces inflammation

Many of the modern diseases we face today originate from chronic inflammation. These are low-grade ignitions. Diseases that can arise from this are cancer, type 2 diabetes and cardiovascular disease. Diseases that are unfortunately major causes of death.

A large part of the fatty acids in avocado is oleic acid. Oleic acid is an omega 9 fatty acid and various tests have shown that oleic acid reduces inflammation. Omega 3 fatty acids enhance the action of oleic acid. Omega 3 fatty acids are also naturally found in avocado, which increases the anti-inflammatory effect of avocados.

Health benefit # 3: helps with a healthy weight

To stay healthy it is important that you maintain at a healthy weight. Overweight is a major cause of  inflammation which can result in chronic diseases. Studies show that it is easier to maintain weight if you regularly eat avocado. This is due to the dietary fiber that is rich in avocado. These ensure that you feel full without the calories count. After all, the dietary fiber leaves the body undigested.

The fat content of avocados also contribute to a feeling of satiety, so that you will not eat too much and retain a satisfied feeling longer after a meal.

Research shows that people who used avocado in their lunch were less likely to eat a snack later in the afternoon.

Health benefit # 4: less chance of cancer

Avocados are also rich in antioxidants in addition to a lot of vitamins and minerals. These are mainly in the dark green part of the avocado; the flesh immediately under the skin. The type of antioxidants contained in avocados could potentially reduce the risk of certain types of cancer. This involves breast, prostate, mouth and stomach cancer.

The antioxidants that reduce the risk of certain cancers are also found in carrots and tomatoes but because avocados contain fatty acids, these antioxidants are absorbed much better. Because of intake, avocados offer better protection against these types of cancer.

Health benefit # 5: helps NAFLD

The abbreviation NAFLD stands for Non-Alcoholic Fatty Liver Disease, in other words: a non-alcoholic fatty liver. This is a condition that many people have and is the result of eating more carbohydrates and sugars than your body can burn. The calorie surplus is stored in the form of fat around and in the liver. As a result, the functioning of the liver continues to deteriorate and the fat and sugar metabolism is disrupted.

At NAFLD there is a greater risk of type 2 diabetes, cardiovascular disease and premature death. It is therefore important that the liver remains healthy. Avocados help with this. These fruits have shown to reduce NAFLD.

The most important things with a fatty liver are lifestyle modifications. Achieving a healthy weight is crucial for this.

The other day I found a box of protein pancake mix and thought about what else I could do with them. As I have a muffin maker I decided to see if I could turn them into pancake muffin bites. They came out great.

Pancake muffin bites ingredients

To make these sweet pancake muffin bites you need the following ingredients:

  • ½ box of pancake mix
  • 2 eggs
  • baking powder
  • water
  • milk

How to make the pancake muffin bites

Start by mixing pancake flour with some baking powder and mix it through with a wooden spoon. Then first add the milk as you whisk it into a consistent mix. Then add some water (depending on the pancake mix you can either use all milk or all water). The pancake mix I used from Body and Fit allows for milk or water so I used both.

Then it is time to add the two eggs and whisk them through the batter. In the meanwhile heat the mini muffin maker. Spray the muffin maker with baking spray and bake the mini muffins between 7 and 9 minutes or until a toothpick comes out clean. 

Dust the sweet pancake muffin bites with icing sugar or with regular sugar.

If you do not have a muffin maker, you can also bake them in the oven. I would suggest to heat the oven at 350℉/175℃ and bake them for about 12-15 minutes or until a tooth pick comes out clean.

This recipe yields 21 sweet pancake muffin bites.

Tasty ingredient suggestions

It is really easy to make different types of sweet pancake muffin bite. You can add e.g. the following options:

  • Cocoa powder – to make chocolate muffin bite add ¼ cup of cocoa powder
  • Chocolate nibs – add a ¼ cup of  chocolate nibs
  • Caramel sauce – want to give the bites a caramel taste add 2-4 tbsp of caramel sauce
  • Oreos – crush Oreos and stir them through the batter
  • M&Ms – crush ¼ cup of the M&Ms and stir them through the batter

Store the sweet pancake muffin bites

The best way to store these muffins is to freeze them in a plastic zip loc bag. Outside of the freezer you can keep them for a couple of days.

  • 200 gram pancakes mix Body & Fit
  • 2 eggs
  • ½ baking powder
  • 200 milk
  • 200 water
  • icing sugar

Instructions

Mix pancake flour and some baking powder

Add the milk to the flour and whisk it into a consistent mix

Add the water until a smooth batter

Then add the two eggs and whisk the eggs through the batter

Heat the mini muffin maker and spray with baking spray. Bake the mini muffins between 7 and 9 minutes or until a toothpick comes out clean

How to make the easiest vegetarian naan bread

Start with the Greek yoghurt and combine it with the olive oil. Give it a big stir so the yoghurt can absorb the olive oil. Set aside.

In a separate bowl combine the self raising flour, salt, sugar and garlic powder. You can use fresh garlic. Mince one or two cloves of garlic to substitute the garlic powder.

Whisk all the dry ingredients through thoroughly and then add the Greek yoghurt. Combine it with a wooden spoon before you start kneading it into a consistent dough by hand. This will take about 5 minutes.

Make a bal and cut 6 equal wedges. Roll into a shape of naan. Warm a griddle or skillet and brush with olive oil. Grill for about 1-2 minute per side. Keep warm in a clean kitchen towel and serve.

This week I showed you how easy it is to make avocado paratha flatbread. These flatbreads go great as tacos with tilapia fish. The fish is oven baked so limited fat and combined with a great bunch of vegetables and sauce.

Fish tacos are healthy, light and easy to digest. Together with the avocado flatbread a great dinner recipe that you may consider Tex-Mex. Want it more spicy add some chili powder to the fish.

  • Cherry tomaten
  • Sweet soy sauce
  • Olive oil

How to make tilapia fish tacos

Put the soy sauce in a cup and add the olive oil. Stir to combine before you add the cumin and garlic powder.

Take a baking tray and put some parchment paper on the tray. Brush the tilapia filets with a coat of the soy sauce mixture and add the cherry tomato to they tray. Pre heat the oven at 420℉/200℃ and bake the tilapia filets for 20 minutes.

To make the Sriracha mayonaise put the mayo and Sriracha in a bowl. Stir well before adding the lemon. Stir some more and finally add some water to make it a proper sauce.

In the meanwhile pan fry the onions and garlic until soft and translucent. Cut the red cabbage fine and warm the avocado paratha flatbread in a skillet. Now combine the taco and start with the flatbread, some cabbage and onion mix.

Then add some of the Sriracha mayonaise. It is time to cut the fish in four and add two pieces on the taco. Some more Sriracha mayonaise and your tilapia fish tacos are ready to serve.

Instructions

Put the soy sauce in a cup and add 1 tbsp olive oil. Stir to combine and add the cumin and garlic powder

Pre heat the oven at 420℉/200℃

Put the tilapia filets on a baking tray covered with parchment paper. Brush the tilapia filets with the soy sauce mixture. Add the cherry tomato to they tray. Bake the tilapia filets for 20 minutes until done

Put the mayo and Sriracha in a bowl. Stir well and add the lemon juice and water. Stir again and set aside

Heat a pan and add 2 tbsp olive oil. Pan fry the onions and garlic until soft and translucent

Warm the avocado paratha flatbread in a skillet

Now combine the taco and start with the flatbread, some cabbage and onion mix

Then add some of the Sriracha mayonaise. Cut the fish in four and add two pieces on the taco

Word of warning up front. Just like cooking with coconut flour you have to be very careful not to put to much coconut in this recipe. Coconut is very absorbing of liquid so start with ½ of the shredded coconut. Then add about an additional ¼ of shredded coconut. Only if it remains too moist after a couple of minutes add 1 tsp and stir to see what it does before you add more.

When this mixture gets to dry it will not bake properly and fall apart (been there, done that). So start out on the low side with your shredded coconut and increase in very small increments.

How to make vegan coconut macaroons

Pre-heat the oven at 350℉/175℃. Put the shredded coconut on a baking tray and toast for 4 minutes. Be careful the coconut doesn’t burn. Put the toasted coconut in a bowl and add 4 tbsp of agave syrup. Stir the syrup through the coconut. Set aside.

First you start of by whisking the aquafaba with a mixer. You can try by hand but this usually takes a long time, if it will set at all. So the easiest way is to use a hand mixer.

When the aquafaba looks like whipped cream add the stevia, vanilla extract and the coconut oil. Then whisk the aquafaba again until all of the liquids are incorporated in the aquafaba.

Take the shredded coconut and put about half of it in the aquafaba. Now mix it through and add ¼ of the shredded coconut. Make sure the mixture is moist else stop adding shredded coconut. If it is still very moist add 1 tea spoon at a time and stir. It has to remain sticky.

Then take an ice cream scoop and scoop about 15 equal sized macaroons on a baking tray covered with baking paper.

Pre heat the oven at 325℉/150℃ before you bake the cookies for 25 minutes. Increase the heat to 350℉/175℃ and bake for another 10 minutes. This to give the macaroons a nice brown color. Let them cool completely and serve.

You can keep them in a closed cookie jar for about a week or put them in the freezer.

  • 140 gram shredded coconut
  • 4 el agave syrup
  • 130 ml aquafaba from a can of chickpeas
  • 1 tsp stevia
  • 1 tsp of vanilla extract
  • 2 tbsp of coconut oil
  • Pinch of salt

Instructions

Pre-heat the oven at 350℉/175℃. Put the shredded coconut on a baking tray and toast for 4 minutes

Put the toasted coconut in a bowl and add 4 tbsp of agave syrup. Stir the syrup through the coconut. Set aside

Whisk the aquafaba with a hand mixer until stiff. Add the stevia, salt, vanilla extract and the coconut oil and whisk the aquafaba again until all of the liquids are incorporated in the aquafaba

Put half of the toasted shredded coconut it in the aquafaba. Stir and add ¼ of the shredded coconut

Only if the mixture is still very moist add shredded coconut 1 tea spoon at a time and stir. It has to remain sticky

Take a ripe avocado and mash it into a bowl until it is almost creamy. Put the cup of flour in a separate bowl. Add the spices and salt on the flour and stir through the flour.

Then add the avocado mash and first stir it through the flour before you knead it with your hand until a consistent dough. This will take a couple of minutes. Create one big ball and wrap in foil. Let the dough rest for 20 minutes.

Cut the ball in 4 equal pieces the size of a golf ball. Take a tortilla press to flatten the paratha. If you do not have a tortilla press use a rolling pin to roll out the flatbread.

Heat a skillet on medium heat and brush the skillet with oil when warm. Bake the avocado paratha flatbread about a minute per side or until brown patches appear. Keep warm in a clean tea towel. Your avocado paratha flatbread is ready to eat.

While going through all of my burrito recipes I found out that I hadn’t shared a beef burrito yet. That is about to change with todays recipe which is one of my favorites. No minced meat in this burrito although you can easily substitute it for the beef here.

Beef burritos ingredients

These beef burritos consist of soft beef on the one hand and some delicious Mexican rice on the other hand. For the beef you need the following ingredients:

  • Quality beef
  • Orange juice
  • Lemon juice
  • Paprika powder
  • Garlic powder
  • Oregano
  • Basil
  • Cumin
  • Olive oil
  • Onion
  • Garlic
  • Tomato sauce
  • Stock cube
  • Water
  • Shredded cheese (optional)

How to make beef burritos with Mexican rice

Preheat your oven at 475℉/225℃. Start by browning the beef in olive oil. This will take about 5 minutes. Take the beef out of the pan and set aside.

Add the onion and garlic to the pan and let it go soft and translucent. Add more olive oil if the pan is dry. When the onion is soft add the orange juice and lemon juice. Add the stock cube before you add the tomato sauce and bring to a boil.

Return the beef into the pan and cover with sauce. Add about half a cup of water until the meat is almost covered. Cover the lid and put the pan in the oven for at least 2,5 hours.

With the lid on the meat will go really soft. During the cooking process add water when needed. Usually this will be at the 1 hour and 2 hour mark. This recipe benefits from long cooking times so the longer you have the better.

During the cooking time make some Mexican rice and warm some chili beans. When the meat is done shred in a bowl and start assembling the burrito.

Start with a big tortilla the biggest available. Then add a couple of table spoons of Mexican rice, then some shredded beef, chili beans and a handful of cheese. Top with some of the rich meat sauce. Fold the burrito and you are ready to serve.

How to store beef burritos with Mexican rice

You can make the shredded beef and the Mexican rice a day ahead. The flavors will be more intense if you store them in a container in the refrigerator. Wrap them in aluminum foil and put them in the freezer for about a month.

  • 4 large tortillas
  • 1 pound of quality beef
  • 1 cup of orange juice
  • 1 tsp of lemon juice
  • 1 tsp of paprika powder
  • 1 tsp Garlic powder
  • 1 tsp Oregano
  • 1 tsp Basil
  • 1 tsp Cumin
  • 3 tbsp of olive oil
  • 1 onion
  • 3 minced garlic
  • 1 cup of tomato sauce
  • Stock cube
  • 1 cup water
  • 1 cup shredded cheese (optional)
  • Mexican rice
  • Chili beans

Instructions

Preheat your oven at 475F/225C

Browning the beef on both sides in olive oil. This will take about 5 minutes then set aside

Add the onion and garlic to the pan until soft and translucent. Add more olive oil if the pan is dry

Add orange juice and lemon juice and whisk before you add the stock cube and the tomato sauce. Bring to the boil

Return the beef into the pan and cover with sauce. Add about half a cup of water until the meat is almost covered

Cover the lid and put the pan in the oven for at least 2,5 hours

7

Prepare the Mexican rice and warm the chili beans during the last half hour of cooking time

8

The vinaigrette in this salad was a classic recipe that I learned from my aunt in France when we were there many years ago. It always stuck in my mind and when I do not know what to put on my salad this is the go to recipe.

How to make avocado tomato salad

Making a salad is easy and fast to assemble. This salad is done in under 10 minutes. If you want to serve the salad in an oven baked tortilla taco bowl start with making the bowl and then prepare the salad.

To make this salad you need the following ingredients:

  • mixed salad
  • red cabbage (grated)
  • bacon
  • avocado
  • cherry tomatoes
  • sun-dried tomatoes
  • sun flower seeds
  • Parmesan cheese to your liking

For the vinaigrette the following ingredients are required:

  • olive oil
  • vinegar
  • mustard
  • mayonaise
  • sugar
  • pinch of salt
  • pepper to taste

Heat a pan and pan fry the slices of bacon without any oil until crisp. Then start with the vinaigrette. Put the olive oil in the bowl and add the vinegar. Whisk the mustard and mayonaise through the oil and vinegar. Then add the sugar, salt and grind some fresh pepper. This result is a smooth vinaigrette. Then add the salad and cover it with the vinaigrette.

To make it super decorative make an oven baked tortilla bowl. This will take 15 minutes. When the salad and vinaigrette you can put it in the oven baked tortilla bowl. Now it is time to decorate the salad. Put the bacon on the salad. Half the cherry tomatoes and put them on the salad. The same applies to the sun-dried tomatoes.

Then you can thinly slice a halved avocado and put them on the salad. Sprinkle some sun flower seeds on your salad, grate Parmesan and you are done.

  • Carrot – grate some carrots and mix them through your salad
  • Pan fried mushrooms – heat some oil and quickly bake the mushroom brown. Put them on top of the salad
  • Shrimp – avocado and shrimp are a great combination so add a couple of tablespoons of shrimp to this salad
  • Turkey – want to keep is lean and low fat remove the bacon and add some piece of grilled chicken fillet or turkey

Ingredients

  • 1 small bag of mixed salad
  • ½ red cabbage (grated)
  • 2 slices of bacon
  • ½ avocado
  • 8 cherry tomatoes
  • 6 sun-dried tomatoes
  • 4 tbsp of sun flower seeds
  • Parmesan cheese to your liking
  • 3 tbsp olive oil
  • Vinaigrette:
  • 1 tbsp vinegar
  • 1 tbsp mustard
  • 1 tbsp mayonaise
  • 1 tsp sugar
  • pinch of salt
  • pepper to tast

Instructions

Heat a pan and pan fry the slices of bacon without any oil until crisp. Set aside

Put the olive oil in the bowl and add the vinegar. Whisk the mustard and mayonaise through the oil and vinegar. Then add the sugar, salt and grind some fresh pepper

Add the salad and cover it with the vinaigrette

Put the bacon on the salad. Half the cherry tomatoes. Put the cherry tomatoes and sun-dried tomatoes on the salad.

Thinly slice a halved avocado and put them on the salad

Grate some parmesan cheese on the salad

Sprinkle some sun flower seeds on your salad

Push the tortilla in the cast iron skillet (cooking spray side on the outside). Pre heat the oven at 440℉/200℃ and bake the tortilla for 15 minutes or until nice and crisp. That is all it takes to make your own oven baked tortilla taco salad bowl.

If you do not have a cast iron skillet no problem. You can use:

  • A glass oven bowl
  • A round cake pan
  • A Dutch oven

If you do not want a big bowl you can also take small tortillas. Take a muffin pan and turn it up side down. Push a small tortilla in the space between the cups. Put them in the oven and you get a small tortilla bowl just like I made for this tortilla Caesar salad.
