Brownies are the best but usually loaded with tons of butter and lots of sugar. Well not this recipe as I use sweet potato as the base. Sweet potato is a great ingredient as it adopts the flavors you combine it with resulting in a great tasting brownie. This is really one of my favorite’s. Do you want to know how you can make healthy sweet potato chocolate brownie? Lets get started!

No, this brownie will not taste like sweet potato. The main reason to use sweet potato is to give the brownies lots of texture and a moist base.

It is quite popular to cook with vegetables when baking cakes and sweets. Besides sweet potato, brownies can be made with zucchini or black beans and even avocado. It might be a strange idea to make brownies with these vegetable. But believe me none of these brownies will taste like the vegetable mentioned. So you can easily substitute butter for these vegetables.

This recipe is completely dairy free, eggless and sugar free. I have substituted all of these ingredients with healthy alternatives like:

  • organic spelt flour
  • apple sauce
  • medjool dates
  • agave syrup
  • vanilla extract

I baked the sweet potato in the oven until soft on 425℉ and mashed them into a puree. You need a good blender to combine all of these ingredients into a smooth mixture. Put this in a small baking dish while I pre heat the oven at 375 ℉. As chocolate and nuts go together perfectly I have added pecan nuts and chunks of chocolate to make it extra yum.

Then it only requires about 30 minutes of oven time before you can take a bite of the most delicious gooey perfect healthy sweet potato chocolate brownie.

Serves: 8 Prep Time: 45 minutes Cooking Time: 30 minutes

Sweet potato is a great ingredient to use as the base in these healthy sweet potato chocolate brownie. This recipe is dairy free, eggless and sugar free.

Ingredients

  • 2 baked sweet potatoes
  • 100 gram of spelt flour
  • 100 gram apple sauce
  • 4 tbsp of agava syrup
  • 6 pitted medjool dates
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 pinch of salt
  • ¼ cup cacao
  • pecan nuts
  • ½ cup of chocolate

Instructions

Heat the oven at 425℉ put the sweet potato in aluminium foil and bake for 45 minutes until soft

Mash the sweet potatoes and put aside

Put the sweet potato in the blender and add flour, apple sauce, agave syrup, pitted dates, vanilla extract, baking powder, baking soda, salt and the cacao

Blend on low speed into a smooth mixture

Put into baking dish and spread evenly

Crunch the pecan nuts and chocolate

Pre heat the oven at 375℉

Decorate the brownie with pecan and chocolate. Bake for 25 minute check or until a toothpick comes out clean
