Taquitos are usually pan fried but oven baked taquitos are not only easy to make but contain far less fat that the pan fried version.
The taquito in this recipe is like a sweet dessert enchilada. The only thing that is missing a great sauce. Mental note to make a sweet dessert enchilada recipe next time.
I brush the taquitos with oil but melted butter is also an option. If you are vegan just use vegan butter or vegetable oil before sprinkling the sugar and cinnamon.
You bake them in a hot oven so the sugar can melt. Serve while hot with some agave syrup or caramel sauce. There is nothing better than the crunch of the tortilla, followed by the softness of the apple pie filling.
