For this dessert recipe, you need the following ingredients ready to go on your kitchen counter.

How to make apple enchiladas

To make this recipe start with peeling the apples and slicing them in small pieces. Sprinkle the apple with lemon juice. Set aside.

Combine water and the arrowroot in a small saucepan. Whisk and add sugar and cinnamon. Put on low heat and add the sliced apples.

Simmer for 10 minutes on low to medium heat and stir occasionally until the apples fall apart. Take the pan off the heat and let it cool slightly.

Stir chopped pecans through the apple filling. In the meanwhile preheat your oven to 350℉/175℃ and line a baking tray with parchment paper.

Heat the butter and take the tortillas. Brush one side with the melted butter. Mix sugar with cinnamon and coat the butter side of the tortillas with this mixture.

Put the sugar-coated side of the tortilla on the baking tray. Take two tablespoons of apple pie filling an put on one end of a tortilla.

Roll the tortilla from the end containing the apples. Put the tortilla, seam-side down, on the baking sheet. Repeat for remaining tortillas.

Put the baking tray in the oven and bake for 15 minutes. Take the apple enchiladas out of the oven and drizzle with caramel sauce or syrup.

Chop the pecans and sprinkle the apple enchiladas with the chopped pecans and serve.

Store sweet enchiladas

This is a great recipe to make ahead and store until you want to serve them. You can store them:

  • Refrigerator – if you want to eat them within two days you can store the enchiladas in the fridge. Put them in an airtight plastic container. You can also cover the sweet tortillas with cling film to prevent them from drying out
  • Freezer – when you baked the apple enchiladas let them cool. Do not yet cover them with syrup or caramel. Wait until you serve this dessert before you decorate

    That looks amazing and I don’t even like apple pie(or any pie) that much. Im a chocolate girl! I might have to make this for my husband and family.

    The recipe calls for 1/2 cup chopped pecans in the first part and then 1/4 cup chopped pecans in the second part. Where does the 1/2 cup of pecans go? I see that you sprinkle with chopped pecans after baking and drizzling, but where do the other ones go?

      Diane,

      You stir them through the apple pie filling before you make the apple enchiladas. The remaining chopped pecans are for decoration.
