As we made red chimichurri this week it was only logical to use it in this recipe but it will taste just a great with this salsa verde green chimichurri.
No reason to waist a great sauce, that can easily sub for a marinade as well.
Chimichurri chicken ingredients
To make this great chicken recipe you need a limited number of ingredients. Take a look at all the ingredient below and put them on your grocery list:
- Chicken thighs
- Red chimichurri
- Olive oil
How to make chimichurri chicken
To make this recipe start with cleaning the chicken thighs and wash with cold water. Remove any excess fat and put the thighs in a big bowl.
Squeeze lemon juice on top of the chicken thighs. Then spoon 4 tablespoons of the chimichurri on the chicken thighs and stir to cover all of the chicken with the marinade.
Preserve the remaining chimichurri.
Heat a skillet on medium to high heat and add the olive oil. Bake the chicken thighs golden brown, this will take about 6-7 minutes per side.
Resist the urge to move the chicken when you add them to the skillet. It will first stick before it releases so be patient and after a couple of minutes, it will come loose.
When both sides are baked turn the heat to a simmer. When the chicken thighs are golden brown add water to let all of the chicken bits releases from the skillet.
Let the water warm through. Serve with some more chimichurri on top of the thighs just like you would do with steak chimichurri.
