The first time we ate huevos rotos was in Barcelona Spain. We were in a tapas place and saw it on the menu.

We had no idea what it was and when they serve the plate with the potatoes and broken eggs we still didn’t understand the concept.

Other customers who ordered the same cut into the egg and let the yolk run onto the potatoes. We just copied what they were doing and we actually liked it.

Spain more so than other countries has a tapas culture where you have a bite after work when you go into a bar and have a drink. These broken eggs fit this concept perfectly.

How to make huevos rotos

Peel the potatoes and cook them tender in 10 minutes. Drain them and let them cool for 10 minutes before slicing the potatoes in round slices.

Heat a skillet medium to high heat and add olive oil. Pan fry the potatoes on both sides until golden brown and crispy in about 5-7 minutes.

Do not crowd the pan and give the potato slices space. You may need multiple turns in the pan depending on the size of your pan.

Take the potatoes out of the pan and set aside in a bowl. Now sauté the onions and garlic until soft and translucent. Put on a plate and set aside

Heat more olive oil and fry your eggs. Leave the yolk whole. Put the eggs on a plate. Then putt the potatoes back in the pan with the onion mix and stir. Season the potatoes with salt and pepper.

Put the eggs on top and add a sprinkling of paprika powder. Leave for 3-4 minutes to warm the potatoes and eggs

Serve and then cut the eggs so the yolk runs on top of the potatoes.
