This snack includes at least three of my favorite dishes:
Further I have included some ground beef, onion, garlic, bell peppers, tomato puree and Jalapeño peppers. Browning the beef then adding all the ingredients to let is simmer until the beef is nice and soft.
This recipe contains beef but you can easily swap the ground beef for:
- Shredded chicken
- Ground turkey
- vegan tempeh meat
Warm the tortilla chips and load the beef mixture on top of the tortilla chips. Add tablespoons of roasted tomato salsa on the beef and repeat with the guacamole.
Nachos should naturally be covered in cheese loads and loads of cheese. Try hard shredded Mozzarella or grated Grana Padano.
For this recipe I used home made vegan cheese and covered the beef with lots of it. Vegan cheese is not only great with nachos but can be eaten as a spread or dip as well.
