Start by cutting the chicken fillet into really small strips. Add two tablespoons of chili powder and two tablespoons of olive oil. Mix well so all chicken is covered with the chili powder seasoning and oil before you set it aside.
Heat a skillet and add the diced bell pepper and onions. Let is go soft and translucent before you set it aside. Then pan fry the chicken until golden brown. In the meanwhile heat your oven and baking tray at 450℉/220℃.
When the oven is hot take out the tray and construct your quesadillas on the baking tray. Put a sheet of parchment on the baking tray. Then add a tortilla and put 2 to 3 tablespoons of chicken to cover half of the tortilla. Then add 2 to 3 tablespoons of the bell pepper mix and black beans.
Lastly sprinkle the grated cheese on the quesadilla and fold the tortilla. You can choose a cheese like grated Mozzarella. To get more flavor you can choose for an older cheese that is more salty in taste.
Repeat and create two more quesadillas. Brush a little bit of oil on the top of the quesadillas and put them in the oven for 8 minutes.
Then take out the baking tray and turn the quesadillas before you return the baking tray into the oven for another 8 minutes.
