A piadina is available all across Italy but unfortunately it is not a recipe that is widely available in other countries.
So what do you do when you can’t buy it in the store? You can just make this Italian piadina yourself. It is a very easy recipe.
Then add your favorite toppings and you have a great lunch recipe. Further this recipe contains olive oil and a little bit of baking soda to make the Italian piadina soft and fluffy.
Just like focaccia or ciabatta this piadina is a little thicker than your regular tortilla and more like a bread. So to bake a piadina you can use a cast iron skillet.

How to make Italian piadina with Mozzarella and Parma ham
To make this recipe you start with making the piadina dough. First put the flour and baking soda in a bowl. Now add water and olive oil and stir with a wooden spoon.
Knead by hand into an elastic dough in about 5 minutes and let it rest for 5 minutes. Then divide the dough in 4 equal pieces.
Roll the dough into a piadina tortilla. If your dough has a lot of resistance you need to let it rest a little more.
