I usually buy my tapenade in the store but every time when I make them myself I’m wondering why. It is really easy to make, done in seconds and usually I have most of the ingredients in my cupboard or refrigerator.

How to make rustic olive and sun-dried tomato tapenade

We are making two different tapenades today a green and a red tapenade. Green tapenade is made with slightly different ingredients than the red tapenade. The taste of a red tapenade is usually a little softer than a green tapenade.

What do you need to make a green tapenade:

  • 10 green olives
  • 2 cloves of garlic
  • 1 cup rucola
  • 1 tbsp of olive oil from sun dried tomatoes
  • 2 sun-dried tomatoes

For the red tapenade you need:

  • 10 black olives
  • 2 cloves of garlic
  • 1/2 cup half sun-dried tomatoes
  • 6 cherry tomatoes
  • 1 tbsp of olive oil

To make it easy add all of the ingredients for the green olive tapenade in a food processor. Depending on how rustic you want it you can whisk it short. Want a more smooth tapenade let the food processor run a little while longer.

The same applies for the sun-dried tomato tapenade. All of the hard work is done by the food processor.

What to serve with rustic olive and sun-dried tomato tapenade

These rustic olive and sun-dried tomato tapenade go with just about anything. As long as you can spread it you are good to go. What do you think about putting it on plain bread, Turkish pide bread, toast, crackers, I use it in tortilla break bread, vegan tortilla soup but also on a vegan lunchbox tortilla wrap. So I’m not exaggerating that you can use it almost anywhere.

Ingredients

  • Green tapenade:
  • 10 green olives
  • 2 cloves of garlic
  • 1 cup rucola
  • 1 tbsp of olive oil from sun dried tomatoes
  • 2 sun-dried tomatoes
  • Red tapenade:
  • 10 black olives
  • 2 cloves of garlic
  • 1/2 cup half sun-dried tomatoes

Instructions

Take the ingredients for the green tapenade and put them in a food processor

Pulse the food processor. If you want a really rustic tapenade pulse a couple of times, if you want a very smooth tapenade let the food processor run for a couple of minutes

Repeat for the red tapenade
