Fajitas is an all time crowd pleaser from the Tex-Mex and Mexican kitchen and it is no exception in our house.  We love fajitas. The beef, the vegetables, the tortillas and some salsa what is not to like?

Fajitas is usually done with grilled beef but I decided to use slow cooked beef this time. I do not have a slow cooker but this can be easily simulated in the oven by putting a Dutch oven in the oven.

To make this slow cooked beef fajitas recipe you need to put the following ingredients on your shopping list:

Fajitas rub:

  • Chili powder
  • Cilantro powder
  • Cumin powder
  • Garlic powder
  • Salt and pepper

Other ingredients:

  • Brisket beef
  • Onion
  • Garlic
  • Ginger
  • Sweet soy sauce
  • Vegetable oil
  • Flour tortillas
  • Bell pepper

Make fajitas seasoning

Besides the meat, what is essential for a good fajitas, is the seasoning. You can buy fajitas seasoning in the store but these usually contain a lot of salt, something I like to limit.

So it is really easy to make a fajitas seasoning rub and it contains the following ingredients:

  • 1 tsp of Chili powder
  • ½ tsp of Cilantro powder
  • 1 tsp of Cumin powder
  • ½ tsp of Garlic powder
  • Fresh grounded black pepper
  • A pinch of salt

All you need to do is mix thoroughly and apply to the meat.

How to make shredded tender brisket fajitas

Start of with some good quality brisket and rub the meat with fajitas rub as described above you check this home made fajitas seasoning recipe. Let the meat rest for about 15 minutes before you bake the brisket in vegetable oil. Brown the brisket on both sides until nice and golden.

Then all you need is onion, garlic and ginger. Remove the meat and fry the onion, garlic and ginger in the pan. Add water and about half a cup of soy sauce. Then return the brisket in the Dutch oven and close the lid. This is essential for the cooking process.

Then you put the closed Dutch oven in a pre heated oven of about 480℉/250℃ and cook for 90 minutes. Because the lid is closed in the oven, the water stays in the Dutch oven which has the same result as a slow cooker making the meat all tender.

Add some water after about 45 minutes while turning the meat. After the 90 minutes are complete I usually add another 30 minutes while adding some more water and turning the brisket again.

After this cooking process the beef brisket is ready to be shredded. Add smooth roasted tomato salsa, guacamole, bell peppers and onion to complete your shredded tender brisket beef fajitas.

Serves: 2 Prep Time: 5 minutes Cooking Time: 90 minutes
Shredded tender brisket beef fajitas

To honour the fajitas on national fajitas day we are making shredded tender brisket beef fajitas. It is slow cooked to make it tender. Lets get started!

Ingredients

  • Fajitas rub
  • 1 tsp of Chili powder
  • ½ tsp of Cilantro powder
  • 1 tsp of Cumin powder
  • ½ tsp of Garlic powder
  • Fresh grounded black pepper 
  • A pinch of salt 
  • Other ingredients:
  • 500 grams of brisket beef
  • ½ onion for the brisket
  • 2 cloves of garlic
  • 1 tsp of grounded ginger
  • ½ cup of sweet soy sauce
  • 2 tbsp of vegetable oil
  • 2 cups of water
  • 4 flour tortillas
  • ½ onion
  • ½ bell pepper

Instructions

Heat the oil in a Dutch oven

Make the rub and put it on the brisket. Let the beef rest for about 15 minutes

Brown the brisket beef in the pan about 5 minutes per side

When all sides are nice and golden take it out of the pan

Pre heat the oven at 480℉/250℃

Add the onion to the meat juice and stir

Then the garlic and the ginger. Stir some more.

Now the water and the soy sauce. Bring to a boil

Return the brisket into the Dutch oven and close the lid

Put the Dutch oven in the oven for 90 minutes

Turn the brisket at about 45 minutes and add some water until the brisket is almost under water

When done at 90 minutes check if the brisket is tender else add 30 more minutes

If cooking time is extended add some water again and turn the beef. Check after 15 minutes and turn the beef once more before taking the Dutch oven out of the oven

Fry the remaining onion and the bell pepper in a skillet

Warm the tortillas in a warm skillet

Shred the brisket on a separate plate. Take a tortilla and add some tender brisket beef, bell pepper, onion, salsa and guacamole.

Notes

You can also add some sour creme, shredded cheese or jalapeños on top of the beef brisket.
