Okay I have a confession to make. I am totally addicted this past few weeks. My husband is looking at me strange and I know what he is thinking. Not again please not again. You see I am making these soft vegan flatbreads (soft tortilla, roti, naan or what ever you like to call them) and I can’t stop. We eat them with just about everything. But that is because they taste so good, so fluffy and soft. They make every dish taste better just like these tender carnitas tenderloin tacos. One very easy recipe to make. Ready to see how you can make them? Lets get started!

This is such an easy recipe you will not believe. If you have a slow cooker you can turn put this together in the morning and have tender tenderloin in the evening. But if you do not own a slow cooker (like me) you can simulate it using your oven. It will take less time but the result is the same. Soft, tender, shredded, pork tenderloin.

Who doesn’t want a recipe that doesn’t require your attention while you go about:

  • cleaning the house,
  • read a book,
  • sip a glass of wine,
  • run after your children or husband or both

and still be able to put a splendid dish on the table. This is also a great recipe for a dinner party because while dinner is cooking you have time to make the house presentable and wow you guests with this fancy dinner.

I start with a good piece of tenderloin of about 300 grams which I cut into three equal parts. To give the tenderloin some spice I add a tsp of cumin and oregano and coat the tenderloin with. Put the tenderloin in a ceramic pan or Dutch oven and add:

  • chopped onion
  • 3 gloves of garlic (whole)
  • 1 tbsp of lemon juice
  • 2 tbsp of orange juice
  • 1 beef stock cube crumbled
  • 4 tbsp of soy sauce
  • 1½ cup of water

Pre heat your oven at 425℉ and cook the carnitas in for 60 minutes. While the tenderloin is cooking boil some potatoes with skin and bake in a frying pan. If you like green beans you can cook these as well.

Take tenderloin out of the oven and shred it into small pieces. Put a skillet on your stove. A normal frying pan will work but I am in love with my skillet and recommend you to get one as well. It will give your tender tenderloin a nice crispy flavor. So add the shredded tenderloin in the skillet and add some gravy. Cook on high heat.

Now it is time to plate it up! Put the potatoes on the plate, add the green beans. Take a soft vegan flatbread (you can warm the in the oven wrapped in aluminium foil) or use a crispy corn taco and take a nice helping of tenderloin. Decorate with some thin sliced red bell peppers. Your tender carnitas tenderloin tacos is ready to serve.

We are making tender carnitas tenderloin tacos with soft vegan flatbread. Nice crispy carnitas with soft flatbread tacos. Simple and easy. Lets get started!


  • 300 g tenderloin
  • 4 soft vegan flatbread or regular tacos
  • 1 tsp of cumin
  • 1 tsp of oregano
  • 1 tbsp of lemon juice
  • 2 tbsp of orange juice
  • 1 small onion chopped
  • 3 cloves of garlic
  • 1 small beef stock cube crumbled
  • 4 tbsp of soy sauce
  • 1½ cup of water
  • ½ finely sliced bell pepper for decorating


  1. Pre heat oven at 425℉ / 220°C
  2. Cut tenderloin in three equal parts and season with cumin and oregano
  3. Put in ceramic pan or Dutch oven
  4. Add lemon juice, orange juice, chopped onion, garlic, stock cube, soy sauce and water
  5. Put in the oven an cook for 60 minutes
  6. Check half way through, turn tenderloin and add some water to keep it covered
  7. Take tenderloin and shred
  8. Heat a skillet and pan fry the carnitas and add 4 to 5 tbsp of gravy to make the meat crispy
  9. Warm the soft flat wrapped in aluminium foil in the oven
  10. Plate the taco and decorate with some red bell peppers and gravy
