The kitchen machine is the fastest way to make this arugula pesto. However if you make it in a pestle and mortar it will get much more flavor.
You can toast the pine nuts for a couple of minutes. I know there is a debate whether or not this has added value. But I like to think that toasted pine nuts add to the overall flavor of the pesto. So warm a small skillet and toast the pine nuts in a dry pan.
When you use the kitchen machine you add the pine nuts, garlic cloves, the arugula, salt and pepper to taste. Turn your kitchen machine to medium and let it run so your pesto is created.
Add between 2 to 4 tablespoons of good quality olive oil and let your kitchen machine run until all of the ingredients are properly minced. Et voila you are done!
Store arugula pesto
There are multiple ways to store your pesto so you always have fresh pesto. You can:
- Store it in the fridge if you plan on using it in a week. Make sure you cover the pesto with enough oil so that all of it is covered.
- You can also store it in the freezer. If you have an ice cube maker fill up the squares with the arugula pesto. That way you can use one or more cubes when you need it.

- 75 gram arugula
- 25 gram pine nuts
- 2 garlic cloves
- Salt & pepper to taste
